ANALISIS VARIASI TEMPERATUR DAN KECEPATAN UDARA TERHADAP UNJUK KERJA OVEN PENGERING JAHE MENGGUNAKAN MESIN PENDINGIN
Ginger (Zingiber officinale Rosc) is a type of herb and medicinal plant that has high economic value and has been widely known by the people of Indonesia. Ginger water content at harvest ranges from 85% - 91% wet base. High levels of water cause ginger to be easily damaged if not immediately processed or dried. The purpose of this study was to determine the analysis of variations in air temperature and air velocity on the performance of a ginger drying oven using a cooling machine. The engine specifications: type: Refrigeration Unit; Refrigerant: R22; Compressors: 1PK; Exhaust Fan: 2 round variations (Low and High Speed). Variations used are temperatures of 30 oC, 35 oC, 40 oC, 45 oC, 50 oC, and air speeds of 2 m / s (Low), 2.65 m / s (High). The results of this study indicate that the fastest drying time occurs at a temperature variation of 50°C with an air velocity of 2.65 m / s and a constant ginger mass of 0,46 kg which takes 157 minutes to reach the ginger mass of 103 gr with a moisture content of 11.958% and drying rate the fastest is 0.0000379 kg / s. While the slowest time occurs at a temperature variation of 30°C with an air speed of 2 m / s, it takes 356 minutes to reach the mass of ginger 103 gr with a moisture content of 11.958% and a drying rate of 0.0000167 kg / s. The highest drying efficiency occurs at variations in air temperature of 30°C and air velocity of 2.65 m / s which is equal to 3.70%. The lowest drying efficiency occurs at a temperature variation of 50°C air velocity 2.65 m / s which is equal to 1.77%.
